Among the organic acids analyzed in fresh 'tuba' and 'lambanog' toddy, lactic acid was the most abundant with 1.6 percent and 20.7 percent respectively. Other acids such as tartaric, laevomalic, and citric were in small amounts. The amount of acetic acid
