In the first two parts the technology of genetic modification is explained. Numerous examples of its use in food production are described in the third section. Several case studies then illustrate how enzymes are used in food processing, showing how many modern practices originated from ancient traditions. Finally, some of the social, economic and safety implications of genetic modification are examined.
